Glad your husband enjoyed the quiche-like recipe. I assume you've already made plenty of zucchini bread... it's a staple around here this time of year... well, that and zucchini lasagna, zucchini stir fry, sauteed zucchini, zucchini slaw, stuffed zucchini, baked zucchini............<br /><br />If all else fails, you can shred them and freeze them for later use. It's time for vegetarian lasagne and a gorgeous courgette and galicky cream cheese soup or scoop out the insides of your courgettes, stuff with garlic cream cheese and grill until golden - yummy!<br />You can tell we get a glut every year, right?
